Whew! Its Thursday night already! Where have I been all week, you ask? Buried under my organic chemistry work! I have had a lot of school. 4 years of undergraduate schooling, one year of Masters program#1, and two years of Master program#2. And after all that….this is the hardest class I have ever taken! I actually think I would be feeling okay about it if it were a regular semester-long class. But fitting a semester into 6 weeks, this course is kicking my butt! It moves so fast that my mind just can’t take it all in.
I had a 5 hour lecture today!! That’s a lot of information to take in, understand, and then retain. But I will survive it. And I’ll try to check in when I can to let you know I’m still alive.
As I said earlier in the week, I have been allowing myself a bit of gluten in the form of my favorite panini wrap….Joseph’s Flax and Oat Lavash bread. 100 calories of soft, fiber-ful bread. I haven’t found anything gluten-free that is like real bread! Today’s lunch featured another panini….and let me tell you….this little bit of gluten-ful bliss every day or two is making me so happy!
This beauty had: a wedge of Laughing Cow cheese, salmon, tomato, cucumber, spinach, artichoke, and a couple squirts of spicy mustard. It made Alkyl Halides and Carboxylic Acids a little easier to take! 🙂
I have been trying to keep up with all of you, but please forgive me if I am not commenting as much. Once I get through this class and move into our new house, I will be breathing easier. July 4th weekend is my finish line. I will be starting a new Anatomy course as this course ends, but it won’t be nearly as bad. And after the 4th of July weekend, we will be snug in our new home!
Thanks for hanging in there with me and continuing to read!
I know it’s tough but do’t you just LOVE the feeling of getting your brain’s ass kicked (teehee)?? I was terrified of the statistics classes I had to take this semester, as the last time I did any math was 10 years ago and I never understood any of it. Flash forwardto this year and despite the preggo distraction (or maybe because?) I really enjoyed how hard I had to work to keep up and understand it all. You can do it!
The bright side is you only have to deal with it for 6 weeks. Good luck!
You’re a trooper! Good job! Keep workin’ and we’ll read more in July.
Your pannini’s looks so amazing!
That panini looks so great! Good luck with your school work!! 🙂 You’ll do GREAT!!
This makes me not miss organic chem at all. Too bad sometimes I start teaching bits and pieces in relation to nutrition science.
Life’s busy — no worries! 🙂 Your paninis look amazing. Good luck with school. You’ll do great!
You’re amazing Shannon!! I don’t know if I could handle all that right now – I admire you! That wrap looks delicious…I’m definitely loving wraps right now, too! I see a lot of people on various blogs buy the Joseph’s brand but I can’t seem to find them anywhere.
Good luck with all of your studying and classes!
ewwwww carboxylic acids!!! Scary words, bringing back memories! I’m glad you are letting yourself enjoy a little gluten these days. I had a piece of cake and pizza last night, despite being PACKED with wheat, but hey, I enjoyed the heck out of them both!!
HAve a nice weekend Shannon. Breath between flipping each page. DEEEEEP breaths!
Wow, you are are a busy lady! Classes are so much more challenging when they are crammed into six weeks! You’ll do great, though!
You rock that school work, girlie! A 5 hour lecture? My brain would have died after the first hour. 🙂
Ewww to chemistry! You are one busy chickie! Hang in there!
Ah Organic. How I miss it! Imgaine all the fun you’ll have when reading the back of a medicine bottle will prompt you to “draw out” the ingredients. You’ll never look at anything the same again. What a difficult and yet fascinating subject!! I was so blown away when I learned about chirality and enantiomers- so amazing!!
I just read your ‘about me’ and I also went back to school and had to take 3 years of prerequisites before I could apply for the program I wanted. I had to work fulltime so I would only take 1-2 courses per semester depending on how hard they were. A&P and Chem=together. Micro and Organic= alone. Haha. Going back to school was scary, fun, weird, and about a dozen different things. I’m so glad to see that I’m not alone in changing careers, in fact a lot of people our age seem to be doing this! Rock on sista 🙂
That panini looks amazing! yum! You are so busy girlie, wow, you are inspirational. Moving in and of itself is exhausting, but studying hard and housing a little one, wow you rock 🙂 Have a good weekend, it will all be worth it in the end
Thanks for the comment on my blog! I saw your blog a few weeks ago because I remember reading about your organic chemistry class. I lucked out and never had to take that but I am surrounded by a chemistry family (sister was a chemistry major and husband is a chemical engineer); I remember them staying up late at night together studying that stuff. LOL.
Good luck with the baby and new house! Can’t wait to follow along!!
Good luck with all your course work. Summer classes really are tough!
That panini looks fantastic. I kind of want to recreate this exact same thing. It sounds perfect.
Yum, your panini look sgreat!
