Being diagnosed with an intolerance for gluten was bittersweet… I was thrilled to finally be able to pinpoint one specific thing that has been causing my stomach trouble for years and years. But at the same time, I was devastated that I would have to give up so many foods that I absolutely love! After crying over the loss of bread and pasta and so many other favorite foods, I decided I simply needed to find ways to make these things gluten-free. Amazingly, in a very short time, I have found a number of new and exciting foods to add to my diets. Some, like spaghetti squash and broccoli slaw have become great substitutes for pasta. Other things, like Xanthan Gum are things I never would have learned about if it weren’t for this little challenge I’ve been given. Below, I will list recipes I have either read or developed and perfected myself. Whether you have to eat gluten-free or you don’t I hope the recipes I compile will be ones that any person would want to try. Check back for updates, as this page will be a work in progress!
Thanks for these – I’m working on finding my favourite gf noods myself. Spaghetti Squash is so much nicer than rice pasta!
Hi Shannon-
My husband works with your husband and that is how I heard about your site : ) Well done and I wish you the very, very best! My son has been gluten free (and dairy free) for most of his 15 years, so I can tell you that it is definitely a lifestyle that can be managed. One of my favorite GF blogs is The Gluten Free Goddess http://glutenfreegoddess.blogspot.com/
Today I’m going to tackle gf mac and cheese (with rice noodles and a vegan roux) and I will let you know how it goes. I found that I mostly end up cooking ethic dishes like Indian, Mexican and Asian because they typically don’t rely so heavily on gluten products.
Good luck with your blog!
